Here in the U.K. we have rain, rain and more rain.
I remember as a kid in the 60’s we would go to Cornwall for a holiday and you were lucky if you got a whole day of sunshine. Mostly we had a few hours of sun then, the wind and cloud appeared and we sat on the beach wrapped in jackets eating sandwiches, wondering if the sun would come out again. Sometimes it rained for days in a row, just like it has been this week.
Still, the garden loves it, and the pavements glisten.
Because it feels like autumn, but is warm, I have made a soup that is cooling and also cosy, a thick nourishing coconut and Courgette soup. It’s more of a meal and could be served with rice or noodles.

Recipe
Coconut & Courgette soup
Here’s a recipe for a summer soup that can also be a meal if you add some rice or noodles.
I used onions, courgettes and potatoes from out back, added watercress and peas to these ingredients, and cooked with a mix of stock, coconut milk and lime.
Ingredients
1 small onion
1 clove garlic
2 tablespoons coconut oil
1 cup chopped courgette
1/2 cup roughly chopped watercress
1 cup thinly chopped potato
1 cup peas
1 can coconut milk
3 cups stock
Fresh lime
Rock salt
Black pepper
Method
Sauté the onion and garlic in the oil until soft then add the courgette, potato and watercress and sauté for a few more minutes. Next add the stock, peas and coconut milk. Simmer until the liquid has reduced and the potato is cooked. Season with fresh lime juice, salt and pepper.
Later on
The sky is dark and full of whispered promises that soon the sun shall return. Stars and moon hidden. The black furred cat next door returns home as I make my way up the garden path, happy to know sleep is but a few steps away. The whole street wrapped up in silence, damp, birds asleep, owls hidden in treetops and the fox roaming. No rain as I open the front door, climb the stairs.
Leaving all the lights off, enjoying the day put to bed, I finish off this post. Then drinking in the beauty of the change of day to night, gazing at the hushed night sky, I take this peaceful mind to bed. To dream of boats and stars and setting suns.
