It has been such a B E A U T I F U L weather weekend here in the U.K. I have been out the whole time, basking in the sunshine and relaxing with friends. And so, now I am back home, I thought I would share three sweet treat recipes.
Coconut, almond & lemon balls
INGREDIENTS
3 cups desiccated coconut.
1 cup ground almonds
2 tablespoons coconut oil
Juice 1 lemon and zest if unwaxed
Enough maple syrup for your sweet taste needs
Grated chocolate or cinnamon or coconut to roll them in
METHOD
Mix the first 4 ingredients in a food processor then roll into balls and cover with the last ingredients. If you know your Ayurvedic constitution these are great for pitta types. But everyone can enjoy them as a sweet treat.
Banana & orange sautéd in ghee
If you know your Ayurvedic constitution this is a lovely dessert for vata types.
INGREDIENTS (per person)
1/2 banana sliced
1/2 sweet orange sliced
2 tablespoons ghee
1 tablespoon maple syrup
Cinnamon to sprinkle
METHOD
Melt the ghee in a pan and sauté the banana and orange for a few minutes, then serve with maple syrup and cinnamon.
Rose halva balls
These are very very moreish. If you know you have a Kapha constitution just eat a little when in balance.
INGREDIENTS
1/2 cup light tahini
1 teaspoon raw honey
1 tablespoon cacao powder
A few drops of rose water
METHOD
Mix together all the ingredients and roll into balls.
Sunny days
I spent the weekend wrapped in green. Covered in sunlight I was, under bright blue sky. My world, gold and rich as I sat on a friends balcony, watching the flight of birds, and the lives of people enjoying the sunny day out front on the grass.
We walked to a beautiful view, high up above the city, and basked in the suns rays. We sang, and we danced. And, we planned a road trip for when we reach our 80’s, through France and Italy in an open topped car, where we will play the same songs, and dance with our arms as we drive along the sun drenched roads.
I met serenity this weekend, and dreams of future escapades.
We ate and we sang.
This evening, back home, all is quiet. Except, for the birds as they sing there way to bed. The gentle rippling breeze blows through the leaves in my window boxes, then arrives on my skin. As the day, ever so gently, turns to night. And, a big black crow flaps it’s wings across the sky, while I, do nothing at all. Peace.

The first song that came to mind was Sweet Dreams by the Eurythmics 🎶😊 Excited to try these recipes. I believe I have a Kapha constitution, so am very drawn to most sweet treats (but do try to limit). Any help for healthier alternatives are always welcome!
